Tramuntana bread

Tramuntana bread is a type of bread made by artisan bakers in the Girona region from varieties of wheat (Anza and Florence Aurore) grown in the Aiguamolls de l'Empordà Natural Park. To grow the wheat, sustainable crop techniques are followed, with the utmost respect for the environment and keeping the use of chemicals to a minimum. The tramuntana, the north wind that often gusts across the Empordà plain, gives its name to this product, as the wheat varieties used must be resistant to its onslaught.
