Bunyols de Vent (Wind Fritters)

Brunyols are a traditional sweet fritter still made today by many Empordà families around Lent and Easter. They are famous for their subtle taste of aniseed and sugar coating. You will also find them in the bakeries and patisseries of Figueres throughout the year. In the city we celebrate the Fira del Brunyol, a festival in honour of Sant Josep.

Ingredients:
 
  • 125 g - Flour
  • 80 g - Butter
  • 4 - Eggs
  • A pinch - Salt
  • Oil
  • Sugar
  • ¼ liter - Water

 

Preparation:
 

Boil the water with the butter and salt. When it starts to boil, add the flour all at once and stir until the dough separates from the sides of the pan and forms a ball.Remove from heat and keep stirring in order to cool and to give it consistency. Add eggs one at a time and keep stirring until you get a smooth dough. Put the dough in a piping bag, squeeze out small pieces of dough and fry in plenty of hot oil.Remove the fritters when they change color and dust with plenty of sugar.


Variations: 
Fill with cream.
